The wines are vinified in barrels of 3 to 7 wines. Alcoholic fermentation can take several months. The wines are fortified with cold and sulfur before being aged on fine lees.

SERVING AND KEEPING TEMPERATURE:
The serving temperature is 10 degrees, this wine can be drunk now but can be kept for ten years. The vintage, with its 90 g of residual sugar and 5.2 g of total acidity, is a vintage for laying down.

HARVEST AND VINIFICATION:
60% of the harvest is done with a machine equipped with destemmers, and 40% by hand with small 15 kg crates. The musts are cold-settled 24 to 48 hours after long pressing at low pressure (max 1.8 kg). The three storeys of the cellar make it easy to work by gravity.
All the alcoholic fermentation takes place in 225 l barrels of 3 to 7 wines. The aging lasts 6 to 8 months, the wines are stirred once a week. Just before the high temperatures, the wines are put back into vats, cleared and then filtered before bottling.
FOOD AND WINE PAIRINGS:
This wine will accompany your aperitifs, especially with slightly refined cheeses such as goat cheese or Comté. Slightly tart yellow fruit pies also go perfectly with this wine.

60% of the harvest is done with a machine equipped with destemmers, and 40% by hand with small 15 kg crates. The musts are cold-settled 24 to 48 hours after a long low-pressure pressing (max 1.8 kg). All the fermentations take place in barrels that are 3 to 7 years old. Aging on fine lees takes place for 6 to 8 months
with one stirring per week.
TASTING NOTES:
This dry Vouvray with a pale and brilliant yellow color offers us a slightly woody nose with notes of acacia, citrus fruits and fresh grapes. With less than 5g of residual sugars, this wine, tender and lively, is very seductive on the palate.
FOOD AND WINE PAIRINGS:
This dry Vouvray will go wonderfully with all your seafood and fish, it can also be enjoyed as an aperitif or goes well with Comté cheese.

HARVEST AND VINIFICATION:
Mechanical harvesting, approximately 65 Hectoliters per hectare Soft pressing (max 1.8 bar) for 4 hours.
Settling after 48 hours then adding yeast, with thiolated yeasts to increase the citrus side.

This vintage cuvée is a selection of grapes from our best Chenin plots. The base wines are carefully vinified in barrels for 6 months, before being bottled. This is followed by careful aging in the cellar for at least three years. Everything thus contributes, to offer a wine combining great finesse of bubbles and a beautiful balance in the mouth.
TASTING NOTES:
This Vouvray with a pale and brilliant yellow color, offers us a slightly milky first nose then will let explode aromas of fresh fruits. The presence of flint in the soil allows the wines to keep a beautiful vivacity and a lot of freshness in the mouth. The finesse of the bubbles is also very significant.

HARVEST VINIFICATION AND AGING:
60% of the harvest is done with a machine equipped with destemmers and 40% by hand with small 15 kg crates. The musts are cold-settled 24 to 48 hours after a long pressing at low pressure (max 1.8 kg). The three floors of the cellar make it easy to work by gravity. 25% of the base wines are vinified in barrels of two wines. After bottling, they are piled up on “slats” for 18 to 24 months before being disgorged.

HARVEST VINIFICATION AND AGING:
The harvest is done 100% by hand with small 15 kg crates. The musts are cold-settled 24 to 48 hours after a long pressing at low pressure (max 1.8 kg). All fermentations take place in barrels. Aging on fine lees takes place for 8 months with one stirring per week.
Several successive selections were necessary to produce this sweet wine.
TASTING NOTES:
Rich in its 140g of residual sugar, this cuvée expresses all the quality of Chenin in the great years. Thanks to noble rot and raisining, aromas of honeyed candied fruit are present. This rich and complex wine has great freshness and significant aromatic intensity. This vintage certainly has a very long aging potential.
